Every family event with my in-laws had Bounulatis

I don’t think anyone was certain about how to spell the name of this traditional Sicilian treat  (Bignolati, Binulata) but that was not the point.  Family, celebration, and good times were the idea.

Here is how I learned to make Bounulatis and how I have done it for a few decades.

Butera Family Bounulatis Recipe

Ingredients:

  • Dough – pizza dough or frozen while bread (thaw and let it rise a bit)
  • Italian Sausage – hot or sweet   (removed from casing)
  • Ground pepper
  • Grated Parmesan or Pecorino Romano cheese
  • Fresh Basil
  • Garlic powder (not garlic salt)
  • Egg wash
  • Parchment paper lined baking sheet

Instructions:

  • Pat or Roll out dough to one large oval piece about ⅛ inch thick
  • Spread raw sausage out on dough.  Pat down to flatten
  • Sprinkle generously with black pepper
  • Sprinkle garlic powder 
  • Tear basil leaves and spread over sausage
  • Cut bread in half 
  • Roll up bread with  everything inside
  • Slice rolls into 1” segments (any size you want, just adjust cooking time)
  • Take one piece of dough, smush it down and twist ¼ turn to make a flat piece of dough
  • Put it on a parchment lined baking sheet
  • Brush the dough with egg wash
  • Bake in a hot oven (424 – 450 F) bottom should be dark but not burned.  Tops should be golden brown
  • Remove to a rack or wax paper to cool.
